We first met Erin Gleeson (in person) when we shot her for one of our signature Pregnancy Style profiles. Over a year and a half later, The Forest Feast blogger, artist, and mama to Ezra has fully embraced motherhood, even coming out with a follow-up to her uber-popular The Forest Feast cookbook with a version for littles—The Forest Feast for Kids: Colorful Vegetarian Recipes That Are Simple to Make.
Below, we’re sharing three recipes from the book, which includes over 35 recipes (from sweet potato pizza to fried banana splits) that are aimed at kids 8-12 who actually cook for themselves. “My goal with this book is to present recipes in a visual and approachable way to make kids want to try new fruits and vegetables,” says Gleeson. “Color is a theme throughout; cooking with colorful produce makes everything more fun!” Check out a sampling right here, and scoop up the entire book at the link below.
The Forest Feast for Kids: Colorful Vegetarian Recipes That Are Simple to Make, $12.60, Amazon.
